Baked BBQ Chicken
Bone-in chicken thighs or legs baked low with garlic powder, then finished with a generous coat of BBQ sauce. Three ingredients, two steps.
Ingredients

- 2.5 lb bone-in chicken thighs or drumsticks (bone-in is the point — don't sub boneless)
- 2 tsp garlic powder
- 1.5 cup prepared BBQ sauce
Steps
- Preheat oven to 350°F (175°C).
- First bake (covered). Place the chicken in a shallow baking dish in a single layer. Sprinkle with garlic powder. Cover with foil and bake for 1 hour.
- Drain. Pull the dish out and pour off any rendered fat.
- Sauce and finish (uncovered). Pour the BBQ sauce evenly over the chicken. Return uncovered to the oven and bake another 30 minutes.
Notes
- Bone-in is non-negotiable. Boneless dries out over the long covered bake — the bone keeps the meat juicy through the full 1.5 hours.
- Sauce choice carries the dish. Three ingredients means the BBQ sauce is doing most of the flavour work — pick one you actually love.
