Speedy Hamburger Quesadillas

HelloFresh weeknight quesadillas — ground beef and cheddar in folded tortillas with a pickle-ketchup-mayo special sauce, served with roasted sweet potato wedges.

Ingredients

  • 2 sweet potatoes
  • 1 tbsp neutral oil (for sweet potatoes)
  • 250 g ground beef
  • 6 flour tortillas
  • 0.5 cup cheddar cheese, shredded
  • 1 green onion, thinly sliced
  • 0.25 tsp garlic salt
  • 90 ml dill pickles, sliced (half chopped for sauce, half whole to serve)
  • 2 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 salt and pepper, to taste (to taste)

Steps

  1. Prep and roast sweet potatoes. Preheat the oven to 450°F. Cut sweet potatoes into 1/2-inch wedges. Toss on a parchment-lined baking sheet with 1 tbsp oil, 1/2 tsp salt, and pepper. Roast in the middle of the oven, flipping halfway, until tender and golden-brown, 22–24 minutes.
  2. Make the sauce. Drain pickles, then finely chop half of them (keep the other half whole for serving). Stir chopped pickles, ketchup, and mayonnaise together in a small bowl. Season with salt and pepper.
  3. Prep quesadillas. In a large bowl, combine raw ground beef, shredded cheese, sliced green onion, 1/4 tsp garlic salt, and pepper. Arrange tortillas on a clean surface and spread half the sauce over them. Divide the beef mixture evenly over one side of each tortilla and fold in half to enclose.
  4. Cook quesadillas. Heat a large non-stick pan over medium-high. Add 3 quesadillas to the dry pan, reduce to medium, and cook until golden-brown and the beef is cooked through (165°F internal), 2–3 minutes per side. Transfer to a plate and repeat with the rest.
  5. Finish and serve. Divide quesadillas, sweet potato wedges, and the remaining whole pickles between plates. Serve the rest of the sauce on the side for dipping.

Notes

The raw beef goes straight into the folded tortilla and cooks through in the pan — no pre-browning. Don’t crank the heat too high or the tortilla will char before the beef is cooked.
